Hello! I am taking a gap year and will be going abroad for a whole school year (9 months). The problem is I was planning to take the SAT over the summer but lo and behold they don't offer tests over the summer!

How can I schedule myself to take the SAT in a foreign country? Is it possible?

You can take the SAT in a foreign country, but different countries have varying registration policies. I would recommend contacting an SAT International Representative based in the country where you plan on staying for your gap year. He or she should be able to give you more details on registration, payment, and available testing locations. Keep in mind that for international SATs, the registration deadline is usually earlier and there is an additional fee for international testtaking, even if you're a U.S. citizen taking the test abroad.
